Multi-criteria Decision-making Technique Approach to Assess the Microbial Quality and Safety of Fresh-cut Salads Sold at Retail in Istanbul, Turkey

The goal of this study was to investigate the microbial quality and safety fresh-cut salads sold in restaurants that were located at Esenler, Fatih, Besiktas, Uskudar, Kadikoy Umraniye Istanbul, Turkey. In total, 180 samples assayed for microbiological analysis including enumeration total aerobic mesophilic (TMAB), psychotropic (AP) bacteria, yeast mold (YM), fecal coliforms Escherichia coli, Staphylococcus aureus, isolation Salmonella spp. Listeria monocytogenes.
